Happy Friday! Time to wrap up this week and get ready for the next! Take a deep breath and kick off the weekend on a positive note. Let's consider where we have been, improve it, and move forward next week. Packing the most content into the least words and trying to change the world, one glass at a time.

3 - Wine Terms - Perfect Pairs

Many people enjoy pairing wine with food but feel intimidated by the whole process. Here are three quick tips to get you going.
  1. Tannins and Fats:

    Tannins cause your mouth to dry out so pair it with a fat or protein. The tannins will bind to the fat creating a velvety smoothness in the pairing. Try cheese, cured meats, fatty cuts of meat or dark meats. The more tannic the wine, the more fat you need to balance the pairing.
  2. Acidity and Sweet:

    Acids in wine cause you to salivate. Think of the perfect glass of lemonade on a hot day - it is a mixture of sweetness and the acidity of the lemons. Pair an acidic wine with deserts, fruits, and sweet nibbles. White wines tend to have more acidity than red wines. And white wines pair with a wider range of foods than reds when in doubt.
  3. Sweet and Spicy:

    What pairs with spicy Asian food or spicy Mexican foods? Sweeter wines do. Off dry wines such as Koi Zen's Sparkling Symphony has a 'kiss of' sweet that cuts the heat of the spices. Our 2018 Zinfandel also has a touch of sweet. Tannic and acidic wines tend to exasperate the spice - so go off dry.

Mental Cleanse

We all know that eating junk food isn't the healthiest choice to make. We know that nutritionally that apples are a better choice than cookies. Many of us workout to achieve a stronger healthier bodies. We watch what we eat through food choice, quantity, and quality. We wear seat belts when driving, helmets when biking, reflectors when running.

But when it comes to mental health - many of us fail horribly. We consume toxic information.  We constantly seek the 'sugar mental high.' We indulge in gossip, fantasy, and speculation. We criticize and pass judgement. Non of these things are good for the mind, and if it is bad for the mind, it will eventually be bad for the body.

So, I encourage you to commit right now to taking a challenge - many will wimp out, or not have the courage to try. But for those who know what is best for their health will try - and the results are amazing.
