Happy Friday! Time to wrap up this week and get ready for the next! Take a deep breath and kick off the weekend on a positive note. Let's consider where we have been, improve it, and move forward next week. Packing the most content into the least words and trying to change the world, one glass at a time.

3 - Wine Terms


1. Must: A term used to describe the combination of grape pulp, skins, seeds and sometimes stems that is fermented to produce wine.The skins provide color and flavor. The seeds provide tannins and texture. The pulp makes the juice. The stems can provide additional tannins but are generally not used.

2. Pomace : The pulpy material this remains after the MUST has been pressed and the wine has been removed. This constitutes about 1/3 of total weight of the original grapes.

3. Gross Lees : The yeast carcasses that fall out of suspension forming a thick yellowish sludge on the bottom of the fermentation tanks and barrels. If left in contact with the wine, they may increase mouth feel though may cause spoilage if not managed properly.
