3 - Wine Terms - Wine and Food Pairing (Basic Rules)

We pair wine with our our tongues and smell wine with our nose. The tongue can only sense sweet, bitter, salty, sour, umami , and capsicum (hot peppers)

1. Body and Appearance: Pair light foods with light wines and bold foods with bold wines. Wine is color coded, just follow this rule and most of the time your pairings will be spot on.

2. Tannic: Tannic wines love to pair with fats and proteins - bring out the big marbled steak, soft cheeses and cured meats. The fats and tannins combine to create a wonderful creamy texture in the mouth.

3. Acids: Acidic wines pair great with food in general - avoid pairing acid with acid, but try sweet, salty or creamy instead.

Geek Zone: - Wine Deception

An old wine merchant expression is:
"Buy wines with water, sell wines with cheese"

Food and wine are a natural pair and a great pairing elevates both. Food can turn a mediocre wine into a fantasy.

How many times have you been out wine tasting, having a great time, nibbling some snacks, the weather is beautiful and your company is delightful. Everything tastes great and you walk away with a dent in your wallet only to wonder why you ever bought the wine. It has happened to me and probably you also - I would love to hear your story so please share.

2 - Quotes from Me:

1. "Admit when you don't know something instead of faking it which is just a lie." ~ The Zen Winemaker

2. "Be amazed at the mind of an infant - the world is fresh, new and without judgement." ~ The Zen Winemaker

1 - Question to ponder:

Walking Meditation

"When walking - just walk, when cleaning, just clean"

10,000 steps is a daily goal for many of us - so take this time to clear your mind with every step.

While walking don't worry about the past, the future, the to do list, or the destination (do stay aware of the surroundings). Feel each leg lift, swing, land and bear weight only to shift to the other side. Feel the center of balance shift from side to side. Feel and hear the crunch under foot or the breeze across your face. Try to walk on earth every day. Loosen the neck and shoulders while you easily swing your arms and please just put away the phone.

Is it better to establish a habit of walking and relaxing or continue the habit of being distracted and stressed?

Give it a try for a week and let me know what you experience.

Something to ponder:

If you shared this newsletter with 2 people, who then each share with two people, how many times would this need to be done to reach every human on earth? Answer
