Happy Friday! Time to wrap up this week and get ready for the next! Take a deep breath and kick off the weekend on a positive note. Let's consider where we have been, improve it, and move forward next week. Packing the most content into the least words and trying to change the world, one glass at a time.

3 - Wine Terms - Wine Faults


1. Rotten Egg Smell: Caused by Hydrogen Sulfide (same funk as from hard cooked eggs) and can easily be removed by vigorous swirling or decanting. Primarily caused during fermentation when the yeast struggle for proper nutrients. Can also be caused when wine is aged on the lees (dead yeast cells) improperly.

2. Oxidized Wine: Due to excessive exposure to air during the winemaking process or after the bottle has been open for a few days. Oxidized wine has a brown tint, flat aroma and may smell metallic. While the flavor may be off (friends don't let friends drink bad wine) is will not harm you. If it is not too bad, used it in a reduction sauce.

3. Funk: A broad range of aromas typically caused by a the spoilage bacteria Brettanomyces or "brett" that smell like manure, barnyard, sweaty socks, wet dog, and let you imagination run wild. You know it when you smell/taste it and it is often found in old world wines and armature wine. While a touch adds complexity, it easily overpowers the wine and is considered a fault.

Geek Zone: - How long does an open bottle last?

In my house, not long. But we recommend to store your opened wine in the refrigerator with a cork standing upright. If you:
  • Pour 1 Glass of wine - immediately cork and store - it should last 3-4 days
  • Pour 2 Glasses of wine - it should last 1-2 days
  • Pour 3 Glasses of wine - maybe overnight
  • Pour 4 Glasses of wine - it won't hold so drink it up or place in small zip-lock and freeze and use for cooking.

Zen masters say, "When walking - just walk, when cleaning, just clean"

The essence of the message is to be mindful of all of your activities. Active meditation involves being present in what you are doing. While doing the dishes, focus on that and only that. Create a beginners mind by being open, curious, non-judging and in the moment. Feel the water, feel the soap, and the texture of the cloth. Gaze at the shimmer of the water droplets and the progress as each dish is transformed from dirty to clean. Feel the warmth of the water and the fragrances of the kitchen. Be present in the journey of dirty to clean. Don't talk, don't daydream, don't worry, just wash dishes.

Practice this often and soon mundane tasks will be cherished and enjoyable.
