Happy Friday! Time to wrap up this week and get ready for the next! Take a deep breath and kick off the weekend on a positive note. Let's consider where we have been, improve it, and move forward next week. Packing the most content into the least words and trying to change the world, one glass at a time.

3 - Wine Terms - Cabernet Sauvignon


1. Description: Recently Cab has become the MOST planted grapes varietal in the world (second to Chardonnay in the US) and is often referred to as the King of wine. Occupying over 5% (840,000 acres) of total vineyard acreage worldwide. France is the #1 producer with the US in second place with 100,000 acres.

2. Origin: In the late 17th century in a romantic vineyard under a full moon in southwestern France, Cabernet Franc got frisky with Sauvignon Blanc and had a baby. This crossing produced Cabernet Sauvignon which is easy to grow, popular, has thick dark skins, buds late to avoid the frost and can grow in a wide variety of climates.

3. Green Bell Peppers? A distinctive taste marker for Cab Sauv are notes of green bell peppers caused by a chemical compound Pyrazine which is found in abundance in immature grapes. Pyrazines decreases as the fruit fully ripens which is often difficult for growers. The human palette can detect pyrazines down to 2 nanograms per liter (very small)

Geek Zone: At Koi Zen we currently have 9 barrels of 2018 Paso Robles Cabernet Sauvignon in one of the large stainless steel tanks awaiting final tweaks before bottling in about 2 weeks. If you are at the winery while it is still in tank, you might even get to sample some directly out of the tank - how cool is that?

There are many things that we CAN'T control such as the weather, traffic, and the stock market - and frustration occurs when we attempt to control the uncontrollable.

There are other things that we CAN control but don't - and frustration occurs when we are remiss in not controlling the controllable.

Many of us avoid these frustrations by playing the BLAME game - "I can't because of X." "I'm not lucky because of Y." "Z always gets what they want."

Logically if you stop the blame game, control what you can control, don't try to force your intentions on what you can't control, make good choices, and take ownership in your choices - is it even possible not to become happier ?
